
Spicy Meat Balls with Aubergine Sauce

500g pork or chicken mince
2 eggs lightly beaten
½ cup bread crumbs
200g pureed brinjal kasundi (hot, medium or mild to taste)
1 bottle aubergine sauce
Combine mince with eggs, bread crumbs and kasundi, roll into balls, tumble in plain flour bake at 200° (fan forced) for 30 minutes or pan fry until golden brown. Serve on rice with warm sauce drizzled over the top, garnish with fresh coriander.
