Beef and Brinjal Curry

500 g diced beef (chuck or blade)

2 cloves garlic

1 onion

250 mls vegetable stock

440grm tin diced tomatoes

1 jar Franklin Road Brinjal Kasundi (hot, medium or mild to taste)


Brown beef in oil to seal, add all ingredients to casserole dish, mix well and cook at 160 deg for 1 ½ hours.

Serve with steamed rice garnished with fresh parsley.
